Peter Gott keeps free range wild boar and rare breed pigs on his farm in Cumbria. The tradition of dry salting and the home rearing of pigs has been passed through the Gott family for generations. His products are second to none and Peter has spent years campaigning for small producers and to protect past and present culinary heritage!
Situated in the Forest of Bowland, this family-run business pride themselves on their excellent produce. Their livestock roam free on the rich unspoilt patches of the Forest of Bowland. Their pigs are a large white cross breed who thrive on their cereal-based diet and organic cheese whey. They are kept outside in pigs arcs. Their Aberdeen Angus Beef are reared extensively in a slower traditional way.
Game is wild, natural and free range with a distinctive flavour making it a great alternative to beef, pork, lamb and chicken. And, as it’s low in cholesterol and high in protein game is one of the healthiest meats available today.
All our game is wild from local estates which is then processed here on the premises so we can offer you the highest quality possible.
All our venison is wild and comes from mainly red or roe deer. All our venison is purchased from local estates throughout Cumbria and North Lancashire. The venison is hung for 7-10 days. Our experienced butcher then prepares a number of cuts.
St James Smokehouse is one of Scotland’s few remaining family-owned traditional smokehouses. This fine delicacy has been hand-crafted in their traditional smokehouse nestled on the banks of the River Cree, Scotland using only the finest fresh Scottish Salmon. Each fillet is hand-cured with pure kosher salt and then naturally smoked over smouldering oak chips from Scotch whisky casks. The Salmon is fully trimmed by hand to remove the skin and dark meat and then vacuum sealed to capture that ‘fresh out of the Smoker’ taste.
