Matured on the bone for up to 3 weeks. Mainly Aberdeen Angus Cattle which are reared extensively in the slower traditional way, and eat only lush grass with a cereal and hay diet through the winter months


The pigs are a large white cross breed, who thrive on their cereal based diet and organic cheese whey. They are kept outside in arcs and roam around the field


Reared extensively on the lush green pastures of the Forest of Bowland, taking a longer and slower time to finish, but paying off in the eating quality of the meat. The meat is then hung on the bone for 10 days giving it time to mature. By far the tenderist of all meat.
